Friends – is anyone else really into jicama lately? It’s an edible root that looks a bit like a turnip, and you peel it and eat the inside, which is crisp and juicy – kind of like a pear/water chestnut combo.
We enjoyed a super simple but really delicious slaw/salad using jicama earlier this week that I thought was worth sharing. No fancy photos, but still really good. 🙂 Just mix together chopped jicama and cucumber, cilantro, lime juice, a drizzle of olive oil, and salt and pepper. Et voila! A surprisingly tasty side. I loved how crunchy it was!
It was also really good atop an Asian-glazed fish with rice!

On the fitness front, I was up early to meet friends Chelsea and Kathleen for a little Definitions boot camp action via ClassPass (affiliate link)! Here’s a sweaty post-workout shot, because I love sharing unattractive photos of myself on the internet. 😉 We did a lot with kettlebells today!
It was a great workout, and I was quite well fueled because last night’s dinner was a delicious Blue Apron lamb burger. Those are carrot fries on the side – genius! They tasted a lot like sweet potato fries, actually. They were coated in olive oil, salt, pepper, cumin, and caraway seeds. So delicious – I’ll have to remember that one for later!
I’m keeping things short today because I need to finish packing and get out the door – I’m headed up to NYC for the rest of the week! Matt and I are going to a wedding on Long Island this weekend, and I decided to head up to the city a couple days early to see friends. You can see what I’m up to on Instagram, as always, and I’ll pop back in on Friday with an update on the NYC adventures, too.
Before I go, though, I’d love some advice from you guys. I’ve been thinking a lot about the blog as the year comes to a close, and I’m considering switching things up a little bit in terms of post timing. Instead of posting 5 days a week, and doing a fair amount of lifestyle content (random eats/exercise from the week, like this post), I’m thinking of switching to posting 3 days a week. This would likely look like the following:
