Engagement Dinner & UNC Running Tour

Good morning! Matt and I went out to dinner on Monday night to celebrate our engagement! Our first engagement dinner was at Panera on the 5 hour drive home from the hike Sunday, so we thought we should probably up the ante a bit. 😉 We decided to go to 411 West, a fun place in Chapel Hill, and brought along a bottle of Blenheim Vineyards wine from Saturday with us, too! I was sporting my new ring, of course! (In addition to a new dress that the Five Bamboo peeps sent me recently! It’s SO soft and comfy.) IMG_4008

Disregard my lion-esque hair. Getting a hair cut on Friday, thank god.

I started with the prosciutto wrapped shrimp on top of sautéed spinach — yum! IMG_0170 Followed by the wood grilled organic salmon, veggies, and roasted potatoes. I had enough left over to enjoy for lunch yesterday — win! IMG_0172           Delicious dinner 🙂 — In unrelated news, I wanted to share some photos from a fun run that I did on last Friday evening with Matt and my grad school friend Lauren! IMG_0096_thumb1 As you guys know, I’m training for the Vegas half marathon in March right now, and I was supposed to do a 7 mile run over the weekend, but I knew we were leaving early Saturday morning for Charlottesville and didn’t want to stress myself out getting up crazy early to run. So instead, I did a 5.5 mile run on Friday evening, and decided to count our crazy 9 mile hike as the rest of my training for the weekend. 😉 Matt’s never really explored UNC’s campus much, so Lauren and I decided to take him on a tour. I hadn’t done a run without a set route in awhile — it was fun to just go off on detours and generally do what we wanted. 🙂 IMG_0099_thumbIMG_0100_thumb The UNC well! We stumbled upon this cool outdoor theatre. Neat! IMG_0107_thumbIMG_0108_thumb1 Lauren working on her yoga skills: IMG_0109_thumb Thanks for the run guys. 🙂 Here’s the obligatory unattractive sweaty post-run photo: IMG_0112_thumb1 I’m heading off to school for class, and then I’m leaving this afternoon for DC! This weekend is our fall break so we get Thursday and Friday off — hooray! It’s perfect timing since our friends are getting married in DC this weekend — Matt is the best man and a ton of our DC crew will be there as well as Matt’s family, so it should be really fun. I was going to wait to go up to DC until tomorrow, but we need to get my ring resized and I want to give the jeweler enough time so we can get it back by Friday so I can wear it for the weekend! I have really small hands and never really wear rings so Matt had a really hard time figuring out size I wore. The jeweler convinced him going a little too big was better than a little too small — true! Catch you guys later from our nation’s capital! 🙂

    This is a bit off topic, but I wanted to let you know that you've inspired me to start running! I regularly go to yoga, but I've always shied away from cardio workouts. Plus, I've never liked doing cardio on machines at the gym, so I figured I would hate running outside too. So I started last week and I just finished my 3rd run this morning, and I'm lasting longer each time I go! It's way more fun to run outside! Plus I like strengthening my lungs and heart. So thank you for the inspiration :)

    Congrats on your engagement!!! I look forward to reading about your wedding planning. That meal looks miiiiiiiiiiiightly delicious. And sweaty pictures are never unattractive, at least in my opinion.
