Hello friends!
I’m back after a busy first day of classes. It’s so fun being back on a college campus again! I can’t wait til the weather gets cooler — I always associate cool fall weather with going back to school 🙂
I’m so excited to finally be officially starting my masters program! There’s 27 of us in my MPH class year and I can’t wait to get to know everyone better 🙂
This semester, I’m taking 4 classes here at UNC Chapel Hill:
On the menu? Tuna salad, my fave. I hadn’t had it in too many weeks 🙂
I followed my usual “tuna salad with a healthy twist” recipe, except I added artichoke hearts instead of celery. Yum!
Topped with cucumber:
And tomatoes!
And, finally, mixed greens 🙂
On the side, I packed a juicy peach:
And for afternoon snacks, a Chobani pomegranate Greek yogurt (love) with some raw oats to mix in (they get super doughy and delish, try it!):
And a package of trail mix I tossed into my bag in case things got dire (def snacked on this some during class):
Time to throw together some dinner! Matt and I are going to see the “Scott Pilgram” movie tonight. Have any of you seen it?
